Also known as pai mu tan, this classic white tea consists of long, fully twisted leaves combined with abundant, downy silver buds collected and withered prior to opening. Its sweet, slightly smoky flavour is smooth and savoury.
Use 1 tsp per cup or 1 rounded tsp per person for a teapot. Pour freshly boiled water, cooled to 70-80C, over the leaves and infuse for 5-7 minutes. May be infused a number of times.
